Ragi malt hot chocolate recipe by chef Chinu Vaze

Dry roast sprouted ragi flour till fragrant. Cool. Mix with the cacao powder, nut mix and corn flour. Keep it in airtight box.

Simmer milk of choice with cinnamon. Take 2 tbsp of premix and mix in 2/3 tbsp of the milk to make a slurry.

Whisk it into the milk. Keep whisking for 3-4 minutes.

Add dark chocolate, vanilla, sea salt and last, add the corn flour slurry. Bring to a boil till it thickens and take it off a heat.

Premix 1/2 cup sprouted ragi flour 1/2 cup cacao powder or dark cocoa powder 1/4 cup almond powder or nut mix 1 tsp corn flour or arrowroot powder
