How to make fresh herbs and spicy bread loaf by Masterchef Sanjeev Kapoor

Put yeast and castor sugar in a bowl, add two tablespoons warm water and set aside for two minutes for the yeast to activate.

Put flour and salt in another bowl. Add yeast mixture and mix well. Grind together coriander leaves, mint leaves, green chillies, ginger and garlic, with sufficient water, to a smooth paste.

Add this paste to the flour mixture and knead into a soft dough. Add butter and knead again. Cover with a damp muslin cloth and set aside to prove for twenty minutes.

Knock back the dough, place in the greased tin, cover with a damp muslin cloth and set aside for twenty minutes.

Preheat oven to 200º C. Grease a loaf tin with some oil. Remove the muslin cloth, put the tin in the preheated oven and bake for fifteen to twenty minutes.

Remove from the oven and brush some butter on top. Let it cool. Remove from the loaf tin, slice and serve.
